Vegan Tomato & Basil Bread Rolls

I decided to make these Vegan Tomato and Basil Bread Rolls as I had fresh basil left over from another recipe. Tomato and fresh basil is one of my favourite combinations, I could make recipe after recipe with these ingredients.


This recipe makes 4 delicious and soft bread rolls. You can make 6-8 smaller rolls if you prefer which will cook in the same amount of time.


These are great to dunk in soup for lunch or dinner. You can cut them open and have them as a sandwich as well. Vegan cheese makes a great filling for these rolls!

I used fresh tomatoes for this recipe, but you could try roasting the tomatoes or using sun dried tomatoes for a different flavour.


I love sun dried tomatoes and basil! Every year at christmas my dad used to make us a sun dried tomato loaf of bread, we all looked forward to it all year round!


If you don't have fresh basil, dried basil will work just as well but will change the flavour slightly.

Tomatos & Basil Bread Rolls - Makes 4


Ingredients


2 tbsp Caster Sugar

1 Packet Instant yeast

2 Cups Plain Flour

½ Cup Vegan Milk - I use oat milk but you can use any plant based milk.

¼ Water

2 tbsp Vegan Butter - I use flora but you can use any plant based butter.

¼ Cup Tomatoes, Diced

2 tbsp Fresh Basil, Diced


Method


In a large mixing bowl, combine ¾ cup of flour, yeast and sugar.


In a pan over medium heat, combine the water, milk and butter until warm. Be careful not to overheat it.


Add the wet ingredients to the dry ingredients and mix for 2 minutes.


Add the rest of the flour and mix to create a dough.


On a floured surface, knead the dough for 10 minutes.


Fold in the tomato and basil towards the end of kneading.


Divide the dough into 4 pieces and place them on a lined baking tray. For smaller rolls split into more pieces.


Cover and leave to rise for 30-40 minutes.


Preheat the oven to 190.


Bake the rolls for 18-20 minutes.


Serve
