Vegan Valentines Sugar Biscuits

Who doesn't love sugar biscuits? These vegan valentines sugar biscuits are so cute and the perfect gift for your loved ones!

These are so fun to make and the results are so lovely!

The recipe is super easy to follow, it's a great one to make with your children! Why not help your children make their parents or grandparents some of these adorable heart bicuits! It's the perfect gift!

You have so much freedom with decorating these; you can change the shape, change the colour, add chocolate, choose different sprinkles. It is completely about what you and/ or your children want to do!

Don't have a heart shaped cookie cutter? No problem! We fold some foil up, to make it a little sturdier and thicker, and form a heart shape with it.

This is such an easy way to make any shaped cookie cutter you would like!

Katie made a youtube video of these, keep an eye out, it's such a cute video and so worth a watch!

Valentines Sugar Biscuits - Makes 30

Ingredients

½ Cup Butter - We use Flora but any plant based butter will work.

¾ Cups Caster Sugar - We use golden caster sugar but normal will work.

1 tsp Vanilla Essence - You can add more vanilla essence if you would like, we often do as we like things very sweet.

2 Cups Plain Flour

1 tsp Bicarbonate of Soda

2 tbsp Water

Icing;

1 Cup Icing Sugar

½ tsp Vanilla Essence - You can add more if you like. It's really about preference.

1 tbsp water

Pink food colouring - Put a little at a time until you get the colour you would like.

Pink Sprinkles

Method

* Preheat the oven 180C and prepare a large baking tray with baking parchment.

* Cream together the butter and sugar.

* Add the vanilla essence

* Sift the four and bicarbonate of soda into the bowl. Rub between your fingertips to create a breadcrumb like mixture.

* Mix the water in to create a dough ball. You may need a little extra, if it's not forming together just add a little more water. Only add a little bit at a time, you don't want to add too much.

* Roll the dough to around ¼ inch thick, on a lightly floured surface.

* Cut your heart shapes out and place on your baking tray. Repeat until there is no mix left.

* Bake for 10 minutes.

* Let cool completely before decorating.

Icing;

* Sift your flour into a small mixing bowl.

* Add the vanilla and water.

* Mix until smooth.

* Add your food colouring. Add a little at a time until you get the colour you would like.

If after adding the food colourig the mix is too runny, you can add more icing sugar to thicken it up.

You can add more water if the mix is too thick.

* Decorate the biscuits once they have completely cooled.

Serve

Enjoy!
