Vegan Vanilla & Pistachio Galaxy Fudge

How awesome does this vegan vanilla & pistachio galaxy fudge look!

This is such a fun fudge for any kids birthday party or even an adult party!


Katie sent me a galaxy fudge that someone had made so of course I had to try it!


I made a vanilla & pistachio fudge and then coloured it like a galaxy.


I'm really happy with how this came out, I think it looks really good and it tastes great too!


This fudge is super easy to make! It gets super hot when you make it so make sure you are careful!


To make this fudge you first need to put the sugar, coconut milk and oil in a large pan.


The coconut milk needs to be placed in the fridge overnight. When you open the coconut milk if you turn the tin upside down the water will be at the top, you can just pour this away, and the cream that you want will be stuck at the bottom.


You will need to tins to make the 400g, only use the cream and not the liquid.


Heat the mix together, stirring, to melt the coconut milk and dissolve the sugar.


Keep this mix heating until it has thickened, stir occasionally so it doesn't burn.


The mix will bubble quite alot and then thicken to a custard like consistancy.


Once it's the right thickness remove it from the heat and stir in the vanilla and pistachios.


You need quite alot of vanilla for this to over power the coconut flavour.


Seperate the fudge mix into 4 bowls.


Colour the mixes blue, black, purple and pink.


You can make these any shade you would like but I went for slightly darker because it's for the galaxy.

Place a spoonful of your mix at a time, randomly in your tin. You want the colours to mix together like in the picture.


Then, using a knife, stir them together to make your galaxy.


Place your stars and balls on. You will need to press them in a little else they will just roll off when you pick the fudge up


Leave to set, at room temperature, for roughly 2 hours or until completly set.


Sice into 36 pieces and enjoy!

Vanilla & Pistachio Galaxy Fudge - Makes 36 squares


Ingredients


450g Caster Sugar

400g Coconut Milk - Chilled in the fridge overnight (only use the white cream) You will need 2x 400g tin. Only use the solid cream, pour the liquid out.

50ml Vegetable Oil

3-4 tsp Vanilla Essence

½ Cup Pistachios


Black, Blue, Purple & Pink Food Colouring

Silver stars & Balls

Gold Balls


Method


Prepare a 20x20cm square baking tin by placing baking parchment in it


In a large saucepan place the sugar, coconut milk and oil.


Place it on a medium heat and stir to dissolve the sugar and melt the coconut milk.


Leave the mix on until it thickens, stirring occasionally. It will bubble alot and thicken.


Once thick like custard take off the heat and add the vanilla and pistachios and mix to combine


Separate into 4 bowls.


Colour each bowl with your food colouring so you have 4 colours.


Place a spoonful of each mix randomly in your baking tin at a time, so the colour is

all mixed together and not all in one place.


Use a knife to mix the colours even more to create your galaxy


Place your silver balls and stars and gold balls around the fudge. You need to push them in slightly else they will roll off when you pick up the fudge.


Leave to set completely, at room temperature, for roughly 2 hours or until completely set.


Take your fudge out the tin and slice into 36 squares.


Serve
