As many of you know, 1 year olds can often be very difficult to persuade to eat!
I have a friend who's daughter only likes chicken nuggets, which can be incredibly difficult!
Luckily my daughter likes her veg and to try new things, however looks can still put her off.
This vegan vegetable fritters are the perfect finger food for a toddler!
They are really quick to make and your children will enjoy helping make them with you!
You can change the vegetables in them so you could let your children decide what they fancy!

They also go well with rice or chips!
Ingredients
¾ Cup Plain Flour - Gluten free if that's needed
1.2 Cup Water
1 tsp Cumin
¼ tsp Garlic Powder
½ tsp Salt
Pepper to taste
1 Small Red Onion - Minced
1 Red Pepper - Cut into small chunks
1 Small Tin Sweetcorn - Drained
1 Large Carrot - Cut into small chunks
Veg oil - For frying
Method
* Sift the flour into a large bowl.
* Add the cumin, garlic powder, salt and pepper.
* Mix in all the vegetables.
* Add the water a little at a time, until the mix will stay together. You don't want to add too much water else you will lose the flour.
If you accidentally make it too sticky, you can add more flour.
* Heat a little oil in a frying pan.
* Form the shapes you would like your fritters to be and then fry for 3-4 minutes on each side. Or until browned.
Serve
