Vegan White Chocolate & Raspberry Fudge

Why are you still buying your valentines gifts when you can make this ridiculously tasty vegan white chocolate & raspberry fudge?


Your valentine will be so impressed if you give them this fudge! You could easily find a cute box to keep them in and a bow to place on top.


This recipe makes 4 large pieces of fudge, you could of course make smaller pieces without the raspberries on top but I don't think it would look as romantic.


This fudge only requires 3 ingredients; rasberries, vegan white chocolate and condensed milk. You can buy vegan condensed milk on amazon or see our recipe here.

It's a super easy recipe to follow and only takes a couple of minutes to follow, you then have to let the recipe set but that only takes about an hour.

This is a super easy one to whip up the day before ready for the morning or the morning ready for the evening!


White chocolate and raspberries go together so well but if you wanted to change this up you could use strawberries, crandberries or really any other fruit that can be frozen.

White Chocolate & Raspberry Fudge - Makes 8 large pieces


Ingredients


170g White Chocolate Any plant based white chocolate will work.

6 tbsp Condensed Milk Find our condensed milk recipe here or you can buy it on amazon.

¼ -⅓ Cup Raspberries - Frozen. I froze mine over night.


Method


* Line a 9x5 loaf tin with baking parchment so it slightly overlaps the edge of the tin. This is so you can fold it over the top at the end.


* Microwave the chocolate and condensed milk for 1-2 minutes or until the chocolate has nearly melted. Do this 1 minute at a time as you don't want to over do it.


* Crush the raspberries so they are small chunks. For this I used a mortar and pestle but the raspberries are so easy to break you could use a wooden spoon for it.


* While the chocolate mix is still hot stir in the raspberries.


* Smooth out the fudge mix into the loaf tin placing 8 whole raspberries on top and refrigerate for 2 hours or until set. Make sure they are evenly placed so when you cut the fudge to shape there is one raspberry on each piece.


* Once your fudge has set, take it out of the tin and cut into squares, making sure you have a raspberry on each cube. It only took about 1 hour for the fudge to set, leaving it overnight is always best though.
