This ratatouille stew is a really tasty, filling dinner! It goes really well with a bit of bread!
It's perfect on a cold winters day and will definitely warm you up!
This recipe is great because you can change the veg to suit you. Got some left over veg that needs using up? Why not chuck that in?
Ingredients
1 tbsp Olive Oil
1/4 Cup (60ml) Vegetable broth - You can use oxo cubes and boiling water to make this.
4 Cloves Garlic - Minced
2 medium onions - minced
Sea salt - To taste
Ground pepper - To taste
3 Bell peppers - bite size pieces
3 small courgette - Diced
2 tbsp fresh basil
1 tbsp dried thyme
6 Medium tomatoes - Diced
4 Medium potatoes - Bite size
1 1/2 tbsp dried parsley
3 Small carrots
1 Tin tomatoes
Method
* Peel the potatoes. Cut into bite size pieces and boil. You will need these later on, drain the water out and set aside for the time being.
* Heat oil in a large pot on a medium heat. Cook the carrots in the oil for 5 minutes.
* Add the onions, garlic, salt and pepper. Cook for a further 2 minutes.
* Add the peppers, courgette and vegetable broth.
* After 2-3 minutes add the basil, thyme, tomatoes, potatoes and tinned tomatoes.
* Cover the pot and simmer for 15 minutes.
