Mushroom Bacon


Did anyone else love bacon baps before they were vegan? I used to love them. When I found a similar recipe to this one I had to create my own, super tasty, mushroom bacon!


This mushroom bacon makes perfect baps, add on to a full english breakfast and perfect crisps!


You can enjoy these crispy mushrooms as a crunchy snack.


This recipe makes enough to make 2 portions in a meal or 1 small bowl for crisps.


I don't like mushrooms because of the texture but when these are cooked into this bacon it's a lovely crisp texture and they taste amazing!

This recipe is super easy to make!


Preheat the oven and prepare your baking tray.


Slice your mushrooms and place them on your baking tray. This must be done before you make the sauce that goes on them.


Mix all the other ingredients together to create your sauce and spread it over each slice of mushroom.


If you leave the sauce to sit, the syrup gets lumpy and then you can't spread it on the mushrooms.


If this happens to you, you can heat it to loosen the mix back up again; Place the sauce in a glass bowl, over a saucepan of boiling water. Whisk the mix until it loosens, this can take up to 5-10 minutes.

These don't take long to cook. Bake for 10-15 minutes or until they are crispy.


Add to a carbonara, place in a bap or enjoy as a super tasty treat!

Mushroom Bacon


Ingredients


5 Chestnut Mushrooms - Sliced roughly 1/2cm thick - I tried other mushrooms and they have burnt, these seem to be the most successful.

3 tbsp Vegetable Oil

1 tsp Golden Syrup - You can use maple syrup or agave nectar too.

1 tsp Smoked Paprika

½ tsp Salt

¼ tsp Pepper


Method


Preheat the oven 200C and prepare a large baking tray


Place your mushroom slices, single layer, onto your baking tray This needs to be done before you make the sauce; if the sauce is sat around the syrup will begin to harden and you wont be able to spread it.

In a small bowl add the oil, salt, syrup, salt and pepper. Mix to combine.


Brush each piece of mushroom with this mix.


Bake for 10-15 minutes or until crisp.


Serve
