Makes 40
Ingredients:
140g Bread Flour
2 tbsp Chia Seeds
2 tbsp Sunflower Seeds
½ tsp Salt
½ tsp Black Pepper
2 tsp Oil
80 ml Water
Method
Preheat the oven to 200C and line a baking tray with parchment.
Place all the dry ingredients in a large mixing bowl and mix thoroughly
Next add the water and oil to the dry ingredients and mix into a dough.
Knead the dough for approximately 5-7 minutes before splitting in half.
Roll out half of the dough as thin as possible (approximately 1 mm thick) and cut out the desired shapes.
Place on a baking tray and bake in the oven for 11-12 minutes
Repeat the above 2 steps with the other half of the dough.

Cheesy, Rosemary & Chives Biscuits
Makes 8
Ingredients
2 Cups Plain Flour
2 tsp Baking Powder
½ tsp Bicarbonate of Soda
1 tsp Granulated Sugar
¾ tsp Salt
½ tsp Garlic Powder
1 tsp Dried Rosemary
1 tsp Dried Chives
1 Cup Milk
¼ Cup Butter
1 tbsp Lemon Juice - about ½ lemon
1 ½ Cup Cheese - Grated
Method
Preheat the oven 220C and line a large baking tray
In a large bowl, sift the flour and bicarbonate of soda.
Add the sugar, salt, garlic powder, rosemary and chives. Mix to combine.
In a small bowl, melt the butter.
Add the milk and lemon juice to the butter. Mix together.
Stir the wet ingredients into the dry.
Add the cheese. Mix so the cheese is evenly spread.
Scoop ¼ cup for each biscuit, place on the baking tray.
Bake 12-14 minutes.

Chia & Sesame Seed Crackers
Makes 40-50
Ingredients
1 Cup & 2 ½ tbsp Strong White Bread Flour
2 tbsp Chia Seeds
2 tbsp Sesame Seeds
½ tsp Sea Salt
Ground Pepper
2 tsp Vegetable Oil
80 ml Water
Method
Preheat the oven 200C and Line a large baking tray
Add all the dry ingredients into a large bowl.
Add the oil and water.
Mix together, using your hands, to form a dough ball.
Knead for 1 minute
Split the dough in half.
Roll 1 half, on a lightly floured surface, as thin as possible.
Cut out your crackers, using a cutter roughly 5-6cm.
Place them on your baking tray, prick with a fork all over and bake for 11-12 minutes.
Repeat with the rest of the dough.
Serve

Sweet Potato Biscuits
Makes 10
Ingredients
2 ½ Cups Plain Flour
3 tbsp Granulated Sugar
2 tbsp Baking Powder
½ tsp Bicarbonate of Soda
1 tsp Salt
½ tsp Cinnamon (optional)
⅔ Cup Oil
1 Cup Sweet Potatoes - Cooked & Mashed
¼ Cup Milk
Method
If you haven’t already done so, cook and mash your sweet potatoes
Preheat the oven 220C and Line a baking tray with baking parchment.
Combine all the dry ingredients in a large bowl.
Add the sweet potato and mix in with a fork.
Add the oil and the milk.
Mix together to become a dough.
Scoop ¼ cup and place on the baking tray.
Bake for 10-15 minutes or until a toothpick can come out clean.

Chive Crackers
Ingredients
1 ½ Cup Plain Flour
¼ tsp Baking Powder
2 tsp Flaxseed
1-2 tbsp Chopping Fresh Chive
3 ½ tbsp Oil
3-5 tbsp Cold water
Method
Preheat the oven to 170c.
Whisk dry ingredients together.
Add the oil and mix until crumbly.
Add the cold water 1 tbsp at a time and mix until it forms a dough. You may not need all of the water.
Put your dough onto some baking paper with another sheet of baking paper on top.
Roll out the dough to about 2mm thick.
Remove the top layer of baking paper.
Use a knife to cut the dough into small squares.
Use a fork to push holes into each cracker. The holes do not need to go all the way through.
Transfer the baking paper with the crackers onto a baking tray.
Bake for around 20-30 minutes.

Pizza Crackers
Makes 45-50
Ingredients
½ Cup Water
1 tbsp Tomato Paste
1 ⅔ Cup Plain Flour
½ tsp Baking Powder
1 tsp Salt
1 tbsp Dried Oregano
1 tbsp Dried Basil
1 tbsp Nutritional Yeast
1 ½ Cup Grated Cheese
1 tsp Olive Oil
Method
Preheat the oven 200C and prepare a baking tray
Whisk the tomato paste and water together until the pasta has dissolved.
In a large mixing bowl sift the flour and baking powder.
Add the salt, oregano, basil, tomato pasta and nutritional yeast.
Knead together to create a dough.
Gently knead in the grated cheese.
Roll out your dough, on baking parchment, as thin as possible.
Cut into as many small rectangles as possible. I managed to make 50
Bake for 20 minutes or until crispy.

Carrot & Apple Cupcakes
Ingredients
1 Cup Plain Flour
1 Cup Oats
½ tsp Baking Powder
1 tsp Cinnamon
Pinch of Powdered Ginger
1 Flax Egg (1 tbsp Flaxseed + 3 tbsp cold water)
2 Ripe Bananas, Mashed
¼ Cup Vegan Milk
1 Small Apple, Diced
1 Cup Carrot, Grated
½ Cup Walnuts, Quartered
Method
Preheat the oven to 180c.
Mix together the flour, oats, baking powder, cinnamon and ginger.
Stir in the banana, milk and flax egg.
Then stir in the carrot, apple and walnuts.
Spoon the mix into the cupcake cases. Fill each cupcake case to the top as the mixture won't rise.
Bake for 25 minutes.

Makes 12-16
Apple & Oat Muffins
Ingredients
1 ½ Cup Plain Flour
1 Cup Oats
1 ½ tsp Cinnamon
½ tsp Ground Ginger
2 ½ Baking Powder
1 Cup Vegan Milk
1 Flax Egg (1 tbsp flaxseed + 2 tbsp water)
1 tsp Vanilla
½ Cup Maple Syrup
½ Cup Diced Apple
Method
Preheat the oven to 180c.
In a bowl, whisk together flour, oats, cinnamon, ground ginger and baking powder.
In a separate bowl, whisk together the milk, flax egg, syrup and vanilla.
Then add the oil to the wet mix a little at a time.
Which the wet ingredients with the dry ingredients.
Let sit for 5-10 minutes to give the oats time to soak up the moisture.
Spoon the mix into 9 cupcake cases, filling them about half way.
Bake for 20-25 minutes.

Fennel & Turmeric Crackers

Ingredients
1 ¼ Cup Plain Flour
4 tsp Fennel Seeds
2 tsp Turmeric
2 tsp Sea Salt
½ tsp Baking Powder
¼ tsp Pepper
½ Cup Water
¼ tsp Cider Vinegar
2 tsp Olive Oil
Method
Sift the flour and baking powder into a large bowl.
Add the fennel seeds, turmeric, sea salt and pepper to the flour mix.
Mix to combine.
In a small bowl add the water, vinegar and oil and mix together.
Add the wet ingredients into the dry ones.
Mix to create a dough.
Knead the dough until it’s soft and smooth.
Wrap the dough in cling film and place it in the fridge for 30 minutes.
Preheat the oven 200C and prepare a large baking tray
Roll the dough out as thin as possible.
Cut out your shapes and place them on a large baking tray
Prick them with a fork a few times.
Bake for 8-10 minutes or until crispy.

Makes 40 Small
Basil & Sun-Dried Tomato Crackers
Ingredients
1 ¾ Cups Strong White Flour
½ tsp Sea Salt
3 tbsp Olive Oil
½ Cup Water
3 tbsp Sun-Dried Tomatoes Minced
3 tbsp Basil - Fresh is Better
Method
Preheat the oven to 170C and prepare a medium baking tray.
In a large bowl sift the flour.
Add the salt and mix to combine.
Add the oil, water, tomatoes and basil into the bowl
Stir until fully combined. Try not to overwork it.
Transfer the dough to a lightly floured surface
Roll the dough as thin as possible and as rectangular as possible
Gently transfer this to your baking tray
Using a sharp knife, cut squares roughly 1”
Use a fork to prick each square 2-3 times
Bake for 15-20 minutes or until crispy
