Vegan Feta Cheese


Feta cheese is traditionally made in Greece and used in a lot of Greek cooking. I made this vegan feta to make some super tasty Greek food which will be up soon!


Joss would holiday in Greece every year as a child, it's something that he can't wait to share with our 2 year old daughter. He asked me if I could make him some Greek food because it's his favourite, so of course I was more than happy to do so. Keep an eye out for those recipes coming.


This vegan feta cheese is super easy to make, it takes about 50 minutes once the nuts have been soaked.


I originally made this feta cheese with almonds, it tastes great and works really well! It's up to you if you use almonds or cashews to make this.


I have written in the recipe to soak the cashews or almonds overnight, however if you want to make this quicker you can boil some water in a saucepan, add your nuts and boil them until they are soft. This takes roughly 10-15 minutes.


This recipe makes 2 4" circular feta cheeses.


To make this feta chesse;


This is a super easy recipe to make, you just add all the ingredients except the parsley into a food processor and blitz until very smooth.


Shape onto a baking tray and bake for 40 minutes.

I used an oiled, large cookie cutter to shape my cheese. Roughly 4"


Once the cheese comes out the oven drizzle some oil over the cheese and sprinkle some parsley.

Feta Cheese - Makes 2 x 4” Circle


Ingredients


2 Cups Cashews or Almonds

½ Cup Lemon Juice

⅓ Cup + Drizzle Olive Oil

1 Garlic Clove

2 ½ tsp Salt

Dried Parsley - to taste


Method


Soak the Cashews overnight. Please see above how to soften them quicker.


Drain and rinse the cashews.


Place the cashews, lemon juice, ⅓ Cup olive oil, garlic and salt into a food processor.


Process until very smooth.


Preheat the oven 90C and line tray a baking tray.


Shape your cheese to about 1” thick on your baking tray I used a large cookie cutter to shape my cheese. Don't forget to oil it so it doesn't stick.


Bake for 40 minutes or until the top is stiff and dry


Straight after removing from the oven drizzle a little oil over the top and sprinkle your parsley


Serve
