Vegan Roasted Pepper Soup


This Vegan Roasted Pepper Soup is a delicious and healthy dinner or lunch!


This recipe makes enough for 2 people. It takes about 30-45 minutes to make but you can roast the pepper in advance to save time. It will last up to 5 days and can be reheated when you're ready to eat it.


I love soup, and home made soup is always fresher and has so much more flavour! It is so healthy as well, you never know what preservatives are in store bought soup, by making it yourself you will know exactly what is in it.


Soup is lovely and warming during the colder months but it is also the perfect light meal after a long summer's day.


I used turmeric in this recipe for a little extra flavour, I found that it really blended well with the roasted peppers. I also chose mostly red peppers for this recipe as red peppers are my favourite when roasted. Orange or yellow peppers also blend great with the red pepper taste.


Turmeric;

Turmeric contains bioactive compounds with powerful medicinal properties.

Turmeric contains curcumin which is a natural anti inflammatory and is linked to better brain health and lowering risk of brain disease.

Curcumin could lower your risk of heart disease.

Turmeric can help provent and may help treat cancer.

Turmeric is used to treat arthritis.


Bell Peppers;

Bell peppers are packed with vitamins, low in calories.

They are a great source of vitamin A, vitamin C, iron and potassium.

Bell Peppers may help lower risk of visual impairments.


Please do your own research as well, there is lots to discover.


The best part about this recipe is that you only need a few ingredients to create a delicious, flavourful soup. I made this soup right before shopping day and I had all the ingredients spare and available, it was also a great way to clear them out of the fridge ready to fill it up again when I’d been shopping the next day.

Roasted Pepper Soup - Serves 2


Ingredients


2 Medium/ Large Bell Peppers - Red, Yellow or Orange

1 Medium Red Onion

½ tsp Turmeric

1 Tin Chopped Tomatoes

1 Veg Stock Cube + 1 Cup Hot Water


Method


Roast the Pepper for 20-25 minutes.


In a pan, fry the red onion of medium heat until softened.


Stir in the turmeric.


Add the tomatoes and veg stock cube with hot water and simmer for 5 minutes.


Add the roast pepper and simmer for 10-15 minutes until softened.


Use a hand blender to roughly blend the mix.


Serve
