This Chickpea, Red Grape and Mayo salad is a delicious meal, sandwich filler or side dish. It is healthy and full of flavour! The grapes add an unexpected sweetness to the mix.
Chickpeas are a great meat replacer, so if you are missing your chicken mayo sandwiches this is a great recipe to try. No, it doesn’t taste like chicken, however it does have a deliciou flavour of its own, as well as being mixed with vegan mayo, which you can make yourself! Try our recipe for vegan mayo.
Try this mix in a sandwich for lunch or with some salad leave. It even makes a great side dish with a barbeque or on a movie night with tortillas and crackers.
I tried made this salad and then took it to work to enjoy on my break; this means I know it'll be a great salad to take on a picnis or for your lunch break.
Red grapes are full of great antioxidants, this mixed with all the goodness; vitamins, minerals and fiber from the chickpeas, makes a very healthy and filling dish.

Chickpeas;
Chickpeas are packed with nutrients, protein and fiber which may help keep your appetite under control; this means they could be good for weight loss.
Chickpeas have many properties that may help manage blood sugar levels.

This recipe makes enough for 2-4 portions and if kept covered and refrigerated will last 3 days.

Chickpea, Red Grape and Mayo Salad - Serves 2-4
Ingredients
1 Tin Chickpeas, Drained + Rinsed
½ Cup Red Grapes, Quartered
2 tbsp Vegan Mayo - Check out our vegan mayonnaise recipe here.
¼ Cup Cucumber, Cubed
1-2 Spring Onion, Sliced
Method
In a bowl, roughly mash the chickpeas. If you prefer the chickpeas to be really smooth, use a blender or food processor.
Mix in the spring onion, cucumber and grapes.
Stir in the vegan mayo.
Serve
